Established in 2005, Kilchoman is one of the smallest distilleries in Scotland and it is no secret that it is one of our Shop favorites! Based on a farm on the rugged west coast of Islay, Kilchoman is the first distillery to be built on the Island for 125 years.
From the distillery: “Kilchoman gives everyone the chance to see what is best about the grass-roots traditions of malt distilling. As well as being one of only a handful of distilleries still practicing floor malting, we also grow our own barley at the distillery, completing all parts of the production process at the distillery – from barley to bottling.”
Named after the prettiest beach on a rough seacoast, ‘Machir Bay’ captures the dichotomy and tension that keeps us guessing, and delighted, all the while. The Farm Distillery’s standard and classic release is a vatting of handmade whisky from casks in a 90% Ex-Bourbon Cask to 10% Ex-Sherry Cask ration. This regimen has proven to be delicious over the years, but, we just couldn’t stop there…
Through a very special project and collaboration with the mast blender on-property, my wife Allie has shifted the regimen and we release with this fall catalogue a most appropriate excuse for you to, indeed, slow down, settle in, and indulge in the intense and deeply satisfying of her own version of Machir bay, now with a uniquely increased Sherry Cask influence. Bottled at a classic 92 proof and simply made for your fireside delight, this is not to be missed! -JZS
