What a deeply satisfying and complete glass of wine.  This beloved organic producer, Domaine Filliatreau, led by father Paul and son Frederik, trailblazes in quality and reflection of terroir in the Saumur-Champigny appellation of Northeastern France, where Cabernet Franc is King.  After destemming, Filliatreau macerates for about two weeks, leaving softer tannin and a more fruit forward finish.  Beginning in the field, these wines, of which “La Grande Vignolle” is the very ‘top of the line,’ reflect, at each step of winemaking and production, that uniquely delicious balance classic technique and modern attention to detail.  The Estate utilizes only native yeast and farms under a strictly organic regimen; we learned recently that the winery is deep in the process of furthering biodynamic practices as well.  Steel tank ageing and the aforementioned short maceration gives “La Grande Vignolle” a bright red and black fruit finish while also keeping the classic earthiness and fresh green garden herbs of a Loire Cab Franc.  Chalk and clay soil at the Filliatreau estate, where all of the grapes “La Grande Vignolle” are grown, produce pleasant roundness balanced with distinct minerality.  Pair this wine with a simple dish of oven roasted pork and winter root vegetables.  And, until we can hop on an airplane again soon, tide yourself over with a little bit of delicious make-believe with a flavor trip to that Parisian bistro where Paul and Frederik’s Cabernet Franc first made its name.
