The small family cellar of El Xamfra is located in Sant Sadurni d’Anoia, the heart of the Penedès and quality Cava. Mercat is a selection of plots between 15-40 years old, planted on calcerous and clay soils. The wine is vinified in the traditional method, aged for 18 months (twice the minimum for the DO), hand riddled, and disgorged to order. Dosage: less than 0.5gr/l.
