This past Summer, I purchased what remains of a small gentleman's farm property out in Litchfield.  On the property, lovingly renamed PAPER MOON FARM, is the wonderful and humble original New England farmhouse.  She's got a front sleeping porch and lots of windows.  It is in this 19th C house, that I am building the Bottle Shop I've dreamt of for nearly 20 years. This second location of The Wise Old Dog is scheduled to open in early 2022.

To celebrate this next chapter, my friends in Scotland have released a single cask Single Malt of my most favorite distillery in the World: Mortlach.  This CASK No. 9473, aged in Refill Sherry Hogshead, is limited to a total outrun of just 211 bottles.  This cask strength Single Malt is very special and deeply personal for me.

Gordon & MacPhail Tasting Panel Notes:

STEWED RAISINS and TOFFEE aromas lead to a subtle hint of LAVENDER. Sweet BLACKCURRANT and COCOA POWDER flavors combine with a touch of BITTER ORANGE. A medium finish of TOASTED ALMONDS.

Non-chill filtered, of course, with no added color, this malt is 116.2 proof and captures, so elegantly, the mercurial and curious experience that every glass of truly good Single Malt should offer.  One moment strong and robust in flavor, the next refined and tough to articulate.  I recommend at least a bottle to drink and a bottle to save for a particularly rainy (or joyous!) occasion.

Mortlach Distillery: An undisputed star of Speyside, this is a distillery which has previously shunned the limelight, being a highly coveted ‘cult status’ dram, thanks to its bold flavour profile and maturation within predominantly European oak sherry casks.

Founded in 1823, this Speysider was the playground for George Cowie -  and after that, Alexander Cowie, who pioneered the distillery’s famed technique of ‘2.81 times distillation’, rather than the traditional method of double distillation, which is still in practice today: resulting in a spirit full of character and power.

Mortlach continues to be one of the region’s most mysterious distilleries and will no doubt retain its cult status for many years to come. Known as the ‘Beast of Dufftown’, the whisky is legendary robust. So much so that the Generations 75 year old came from this distillery, a feat only achievable when great casks and great spirit are truly well matched.
