Made entirely from estate grown Pinot Noir, Barbichon traditionally vinifies a very small slice of his vineyard to be enjoyed as still red wine instead of sparkling rosé Champagne or Blanc de Noir. This ethereal, elegant unicorn is unlike anything you’d find in Burgundy. Extremely pale, light (only 11.5% abv), and fully mineral driven, the wine is a wild and fresh experience. It is incredibly delicious. Tart red fruit and bright acidity combine to reflect the cold-climate electricity sometimes absent from sparkling wine where bubbles and barrel fermentation can hide the aroma and taste of the farm.
