Wine
The Granit Blanc vines were planted in 2004 on a north-facing hill in the AOC Cornas area . This exposure is not qualitative for a red , but it is an advantage for the white : This allows optimal maturity without excess alcohol .
The soil is typical of the Cornas appellation, with very decomposed granite , almost sand . Production is limited to 4,000 bottles per year .
C stages
2/3 Viognier and 1/3 Roussanne.
Winemaking
Start with slow pressing. Fermentation and aging take place in vats.
The wine is bottled after 6 months without having undergone malolactic fermentation.
Tasting
The aromas of Roussanne and Viognier give a nose of great complexity . On the palate, we find apricot and peach , typical of Viognier .
Roussanne brings minerality for a good balance .
The wine is structured , with a lot of depth.
Aging
I recommend drinking this wine within 5 years, but although it was not developed for this purpose , this wine can be kept for ten years.
Accompaniement
An aperitif wine, it can also be drunk with chicken, other creamed white meats and fish.
