Traditional method
Cuvée without added sugar
3 and a half years of aging on slats (with its yeast in the bottle, before being disgorged)
Fermentation lasts 4 to 6 weeks, without yeast addition or chaptalisation. It starts spontaneously thanks to the indigenous yeasts which contribute to the terroir effect. It is stopped by cooling the wine followed by racking. Aging is then carried out on fine lees, in barrels and in vats. It lasts 2 to 3 months. Before bottling, a light filtration is carried out. This cuvée has benefited from 4 years spent in the cellar, on slats. It is without added sugar.
