Simply Steamed Artichoke
STEAMED ARTICHOKE
Nothing is more delicious from the farmer’s market.
FRESH GROCERY LIST
☐ 5 artichokes (or any amount desired)
☐ 1 lemon, juice divided
PREPARE a large bowl with cold water and juice of 1 /2 lemon. Artichokes oxidize very easily and keeping them submerged while cleaning and before cooking keeps them green.
PEEL stems of artichokes with vegetable peeler to reveal tender green color.
CHOP the bottom 1 to 1.5 inches with a large carving knife. Trim any additional pointy petals with kitchen shears.
BOIL a pan of water with remaining 1 /2 lemon
SET the artichoke flowers in the basket of the steamer and steam over gently simmering water for 35-45 minutes, or until stem is tender and leaves can be easily plucked.
SERVE with aioli for dipping.
Wondering how to eat artichokes? Pluck a petal from the flower, and dip the base end (where it attached to the flower) in aioli and use your teeth to pull the soft flesh from the petal! Repeat for all the petals and note how tender they become as you continue to eat toward the heart!
To drink, I recommend an elegant, unoaked, fruit driven white wine. A few favorites include:
