This cognac is made from 50% Colombard and 50% Ugni Blanc, grown on limestone soil. The grapes are selected after fully maturing, and macerated for 36 hours for a fully concentrated and aromatic Pineau des Charentes. Pineau des Charentes is a regional appellation slightly northeast of Bordeaux, known for fortified wine, like Cognac, but lighter and sweeter. It can be enjoyed on ice, with a dash of Gin, or as a long drink with tonic. It is also an awesome apertif with bleu and other aromatic cheeses, apricots, figs, and toasty crackers.
