Sunday Night Supper: A Study of Slope
Jacky Blot (RIP 2023) is one of the truly great producers of Loire Valley red wine. Here, a deep(er) dive with a delicious conclusion.

This Blanco tequila from Cascahuín in El Arenal, Jalisco (NOM 1123), crafted by Maestro Tequilero Salvador Rosales Torres, is made from 100% Blue Weber agave that is steam-roasted for 72 hours in a brick kiln, crushed with a small hand-operated roller mill, and fermented for 96 hours in brick and concrete tanks before being twice distilled in a stainless steel pot still with a copper coil. It is then rested for 45 days in first- and second-fill ex-Bordeaux wine casks, giving it a gentle kiss of oak that remains gracefully integrated, allowing prominent cooked agave and yam notes to shine alongside hints of vanilla bean, wet clay, nutmeg, stewed currants, and a touch of tobacco leaf—an experience that compellingly pushes the boundaries of blanco tequila. Additive-free and bottled at 41% ABV, this expression embodies Héritage, the realized dream of Montagave founders John and Lucie Melvin, inspired by a wedding gift they created using a red wine cask and Cascahuín tequila—a union of NOM 1123’s renowned craftsmanship and fine French oak wine casks.
