Trimbach Pinot Blanc, 2021

This wine is made of 100% Pinot Blanc. It shows an refreshing citrus notes backed by strong acidity and some texture. The grapes are from Trimbach’s own estate vineyards, including the noted Lieux-Dits vineyard which are considered Premier Cru, harvested in late September/early October and vinified at the Trimbach winery. Fermentation occurs in temperature controlled stainless steel and concrete vats and the wine does not undergo malolactic fermentation. We would pair this with a fried chicken or fish sandwich, topped with a red cabbage slaw and mint-lime aioli.
