Domaine Christophe Mittnacht 'Gyotaku' Alsace, 2022

This wine is made of 45% Pinot Blanc, 23% Pinot Gris, 16% Gewurztraminer, 8% Riesling, and 8% Muscat. “Gyotaku” is a traditional Japanese art form created by pressing paper onto a fish covered in ink. The grapes are farmed biodynamically, and grow from 30+ year old vines on clay and limestone soil, for a boost of minerality. The wine is soft and floral, with flavor notes of white peach, apricot, and gala apple. The winemaker, who married a Japanese chef, had a sushi pairing in mind when crafting this cuvée, so grab your favorite roll and chill this bottle down.
