Salmon: Three Wines + Three Ways

This wine is made from 70% Sauvignon Blanc and 30% Sémillon. It is vinified in used barrels with at least three pass-throughs, and aged on its lees for a year. The grapes are sourced from parcels outside Bordeaux usually known for producing the dessert wine Sauternes. However, the wine is fermented until it's dry, and is full of tangy tropical fruit flavors. This wine is the perfect pairing for the usually difficult-to-pair asparagus.
