Salmon: Three Wines + Three Ways
Building momentum in the Kitchen and in the Cellar can be the very best thing for your skills and, as importantly, your feelings about them. Part Two: Salmon.
This wine is made from 72% Merlot, 11% Cabernet Franc, and 11% Cabernet Sauvignon. This is the second wine under the renowned Château de Sales ownership. 2016 was an exceptional vintage, with a cool early growing season followed by a hot and dry summer into harvest. The grapes were able to mature very slowly and gently, developing all the richness and depth they needed. 1/3 of the juice was matured in oak with the rest done in vats. Intensely aromatic with fresh spices, and well balanced palate of red and black fruits and cocoa. We would pair it with a juicy prime rib seasoned with rosemary, garlic, and sea salt. Throw in some duck fat fried potatoes with the same seasonings and call it a feast.
