This Loire Valley Cremant is 90% Chenin Blanc and 10% Grolleau. It is crisp an inviting with notes of pear, green apple, and salinity. It it Extra Brut with ripping acidity making it perfect for soft cheeses, appetizers and fried seafood platters.

Location: Montreuil-Bellay, Loire
Size: Started as micro-négoce with a first bottling of crémant Physis 2017. In 2015, Etienne was gifted 1.4 ha (3.46 ac) of Cabernet Franc in "Clos Durandière" as a wedding present. Additional parcels will be added in the near future.
Varieties: Chenin Blanc, Grolleau
Viticulture: Biodynamic (not certified)
Vinification (Crémant): Whole cluster pressing at low pressure, separation of first press and end-of-press must, ambient yeast fermentation, blocked malolactic fermentation, briefly aged in stainless steel tank, bottled in spring, further aging on lattes for 30 months, low dosage.
