This is 100% Cabernet Franc, grown from 65-85 year old vines on that classic Saumur limestone. The grapes are totally destemmed before being punched down in large wooden vats, where they mature for 14 months. This wine has finesse and stays quite elegant for Saumur-Champigny. It is lusciously black fruited, with soft elements of black pepper and earth. It is at the beginning of its prime drinking window but could be laid down for a while. It would pair nicely with fried eggplant cutlets, or with a juicy New York Strip.

Vinification
Total destemming before vatting, with 28 days of
vatting. Manual punching in 40 hectoliters wooden
vats. No chaptalisation. Maturing for 14 months, 50%
in wooden vats of 12 HL and 50% in casks of 600 L.
