Salmon: Three Wines + Three Ways
Building momentum in the Kitchen and in the Cellar can be the very best thing for your skills and, as importantly, your feelings about them. Part Two: Salmon.
This wine is made of 100% Chenin Blanc. The Mosse family is making superb natural wines in Anjou, and the 2015 Vin de France Le Rouchefer is a classic example. Le Rouchefer is a single vineyard bottling from a 1.66 hectare parcel of the same name. The wine showcases floral aromas of quince, pear, citrus, and stone and is fruit forward, backed by powerful acidity and minerality. We would pair this with a wide variety of flavorful seafood stews, roast poultry dishes, and cheeses like Humboldt Fog, Taleggio, or Nancy's Hudson Valley Camembert. Serve cool, but not too cold, over the next ten to fifteen years.
