Salmon: Three Wines + Three Ways
Building momentum in the Kitchen and in the Cellar can be the very best thing for your skills and, as importantly, your feelings about them. Part Two: Salmon.
This wine is made of 100% Cornalin, an indigenous grape varietal to the Valle d'Aosta and southern Switzerland. We would pair it with a lighter cut of steak like Filet Mignon. The grapes are grown on the steeply sloped Rovettaz vineyard, which sits at 500-700 meters in altitude. The wine is bright and aromatic boasting alpine herbs and flowers. It is elegant and acidic with dark cherry and raspberry flavors, and the softest tannins. First produced in the 2005 vintage, the Cornalin from Grosjean has the potential to be a serious, long-lived wine and is Biodynamic Certified.
