Salmon: Three Wines + Three Ways

100% Nebbiolo from the lesser known, but still classic Piedmontese growing zone of Roero. The several vineyard sites for this wine are situated on rich sandy limestone soils, as the area was once an ancient sea called the Golfo Padano. Each site is vinified and macerated for a few weeks, before coming together in large casks. The wine is then bottled during the waning moon following the next harvest, and sits in bottle for almost a year. Roero Nebbiolo tends to be lighter and more fragrant than its peers in Piedmont, but always benefits from lots of sun during the growing season to ripen its serious tannins. Pair with a roasted half chicken, served with par-boiled and roasted potatoes sprinkled with rosemary, thyme, and lemon olive oil.
