This wine is made of 85% Sauvignon Blanc and 15% Sémillon. It is aged on its lees and has a juicy, textured palate of mango, lemon curd, and honey. We would pair this with drunken noodles with ground pork. Château Jean Faux, located not far from the Côtes de Castillon, is an historical estate that dates back to the 18th century. The estate consists of 45 hectares of woods, orchards, rolling hills and 11.5 hectares of vineyard is two hectares of vines reserved for white grapes, consisting of 80% Sauvignon Blanc and 20% Sémillon. The terroir of Château Jean Faux is clay and limestone soils. Since 2011, the property farms using only 100% biodynamic farming techniques in the vineyards.

From the winery: Château Jean Faux is a very old Estate. The foundations date back to the Middle Ages, when Sainte Radegonde was a Templar village. The Fortress has now disappeared, although a part of it is still visible on the estate. In the 16th century, the estate was owned by the family of Ezekiel du Mas, Count of Mélac, a famous general of Louis XIV who organized and renovated the building in the 18th century. In the 1st Féret of 1886, we can read that Jean Faux was the 1st “owner of the canton, with a production of 120 barrels of red wine”. In 2002, the Collotte family began renovating the Estate, and in just a few years, things have changed a lot at Jean Faux. The watchword for craftsmen: “when you leave, we would like to think that you never came”. The renovation preserved all the buildings.

Chrystel is from the nearby village of Sainte Radegonde. For her, it's a return to the roots. Pascal, who wanted to become a winegrower, dreamed about a property with an authentic charm. In 2002, they bought the estate with 45 hectares, including 1.5 hectares of vines. Cooper before becoming winemaker, he traveled around the world and visited hundreds of cellars. What could be more logical than wanting to finally settle down and become a “vigneron”. Château Jean Faux, a secret corner in the heart of Bordeaux, is the perfect place for the family. Here, an entire “art de vivre” is possible, by being turn in turn winegrower, gardener and “bon vivant”. Quite naturally the children, Clémence and Victor, join the team in 2016 and 2018, and continue to write the history.
