Sauvignon Blanc is one of the most popular grape varietals in the world. It is loved for its "green" herbaceousness, refreshing acidity, and versatility in any setting, whether at the table for a serious food pairing, or at the summer grad party for a seriously good time. Sauvignon blanc is grown almost anywhere and is offered in a range of styles from dry and mineral driven to sweet, syrupy, and oxidative. The most desirable expressions can be found in France in the Loire Valley and Bordeaux, specifically in the appellations of Sancerre and Sauternes, but there is incredible value in other regions like Marlborough in New Zealand, Mendocino County in California, and Touraine, also in the Loire Valley. High acid, mineral-driven Sauvignon Blanc cut effortlessly through lighter flaky fish dishes, rich and creamy pastas, and soft, fatty cheeses. Sancerre and Crottin de Chavignol, a french soft ripened goat cheese would make for an extremely delicious and traditional French pairing. Sweet, syrupy expressions like Sauternes and Barsac complement and uplift the flavors in tangy, fruity desserts like peach crumble, or lemon meringue.
