The entire vinification process of this incredible wine, including the malolactic fermentation, is done in small concrete tanks. The best grapes from our vineyard are harvested and selected by hand in small crates and after a soft pressing, they are vinified with cold pre-fermentation and a long maceration, with frequent pumping over and delestage, in search of the optimal extraction to obtain a wine with a harmonious structure and great complexity.
After the malolactic fermentation, the aging process in wood for the wine begins, which evolves for 24 months in specially selected French oak. A further year of aging in concrete tanks completes the maturation process and thanks to natural decantation the wine is bottled without any filtration to begin the long aging in the bottle
