This wine is made from 100% Pinot Noir. It is a blend of Pinot grapes from three separate climats in Molesme, and is incredibly dry, with only 1g/L of residual sugar. The vineyards are in some of the most northern corners of Burgundy and have been known to make exceptional crémant for decades. Enjoy it with oysters or the triple créme cheese Brillat-Savarin and some petits toasts.

From the winery: Alix Chaudoreille was born in Champagne, and spent her entire childhood among the vineyards, in the Côte des Bars. Although she did not come from a family of winegrowers, she worked whenever she could, doing small seasonal jobs, in the vineyards of the different wine villages where she lived, Landrevilles, Bar-sur-Seine, Polisot…

She began her professional life with a 10-year career in law. In 2015 she became Mrs. Alix Dangin, when she married Matthieu Dangin, an oenologist in Champagne and owner of the organic estate “Bruno Dangin” in Burgundy. It was through his contact that the idea of ​​a professional reconversion in organic viticulture was born.

She falls in love with the almost secret terroir of Molesme (21330), in the confidential vineyard of Châtillonnais. This vineyard produced grapes intended for the production of Champagne before the law of May 6, 1919, which delimits the AOCs. This law respects the administrative limitations of the departments, it therefore excludes the Châtillonnais vineyard from the AOC Champagne. But it does not take into account the geological and climatic limits which make this vineyard the continuation of the Champagne vineyard of the Côte des Bars (Bibliography: "The vine and the winegrower of the Côte du Châtillonnais" by Georges Calvet). The vines are located only 3 kilometers south of Champagne and have already been certified Organic since 2014. The soil is very shallow, directly on limestone, which is perfect for producing a concise range of Crémant de Bourgogne on minerality and precision!
