This lovely sparkling wine is made from 100% Ugni Blanc. The wine is so clean and bright that it may be paired with most appetizers, cured meats and cheeses, oysters, and light pasta dishes. Simonet produces its wines with the Caves de Wissembourg collective, in the picturesque village of Wissembourg right on the German border. The wine is fermented after a brief maceration on the grape skins, extracting more recognizable citrus flavor and floral aromatics from the Ugni Blanc. It is extremely delicate but very refreshing.
