Salmon: Three Wines + Three Ways
Building momentum in the Kitchen and in the Cellar can be the very best thing for your skills and, as importantly, your feelings about them. Part Two: Salmon.
A blend of 60% Macabeu and 40% Garnatxa Blanca from certified organic vineyards planted at 300-350 meters altitude on Terra Alta’s typical panal soils (silty loam with high limestone content and layers of gypsum), fermented in stainless steel and bottled early for a fun, young wine, brimming with the salty freshness and crunchy white fruits that Terra Alta soils and a light hand in the cellar can achieve.
The 2022 Xalera blend has 60% Macabeu, which contributes the light, floral notes and acidity to the blend and amps up the enjoyment factor even further than before! 40% Garnacha Blanca adds sunny fruit, saltiness, and mouthfeel. It is easy-drinking, food-friendly, and fun, with lots of freshness, tension, and vivacious, juicy Mediterranean fruit. And, as of 2021, Bernaví is certified organic!
