100% organic Sauvignon Blanc from the Rattlesnake Hills AVA of south-central Washington State. The vineyards benefit from a great deal of diurnal shift, with constant daytime sun, and cool, dry evenings. The wine was fermented and aged in a 700 Liter concrete egg for 24 months before bottling. The concrete helps to give this Sauvignon Blanc a richer texture and minerality behind its usual herbaceous and tropical profile. Pair it with grilled halibut, dressed with a classic chimichurri.

Vineyards in the Rattlesnake Hills benefit from constant daytime sunshine and cold, dry evenings. This climate helps tone down a lot of the green, herbaceous notes typically associated with Sauvignon Blanc.

Our 2022 One Egg Sauvignon Blanc was fermented and aged in a 700 liter concrete egg tank for 24 months before bottling. The nose expresses very subtle aromas of cut grass with tropic hints of guava and passionfruit. The palate is rich and textured with notes of zingy jalapeño and zesty citrus.

Only 75 cases produced.
