Alice and Olivier De Moor are a husband-and-wife domaine based in Courgis, just southwest of Chablis, and among the region’s early advocates of organic, low-intervention winemaking. Both trained as oenologists in Dijon, they established their domaine in the late 1980s, planting their first vines in 1989 and producing their first official vintage in 1995. From the outset, they favored low yields, hand harvesting, careful soil cultivation, indigenous fermentations, and minimal cellar intervention; their vineyards were farmed organically from the beginning and became certified in the 2000s. Today, the domaine works roughly 7–10 hectares across Courgis, Chitry, and Saint-Bris, producing highly individual expressions of Chardonnay and Aligoté alongside smaller quantities of other varieties. Their wines are prized for their combination of Chablis’s characteristic limestone-driven freshness with remarkable texture, depth, and natural energy. In 2009, they also established the négociant label 'Le Vendangeur Masqué' allowing them to work with organically farmed fruit from growers whose approach aligns with their own.
