Salmon: Three Wines + Three Ways
Building momentum in the Kitchen and in the Cellar can be the very best thing for your skills and, as importantly, your feelings about them. Part Two: Salmon.

This delicious, biodynamic, chillable red is made from 90% Grenache, 8% Syrah, and 2% Mourvedre. The wine goes through a super short 1 week maceration and is then aged on its fine lees for 10 months in stainless steel vats, to give it a little backbone. Anne Collard's vineyards for 'Shi Fu Mi' are situated at the foggy confluence of the Rhône and Gardon rivers, well ventilated by the Mistral, a cool northerly wind that impacts much of the Rhône during the growing season. Pair this with just about anything, but get fancy with some grilled swordfish steaks and a tangy chimichurri.
