This wine is made of 100% Montepulciano. Cirelli is certified organic, but also farms with biodynamic inspiration, raising other crops, including olives for oil, and herds of animals for grazing, fertilization, and meat. For this wine, the grapes are de-stemmed, gently crushed, and fermented with native yeasts in stainless steel for around 6 months. The wine is made with a very gentle extraction, making for the classic light and juicy Montepulciano, but Cirelli's cuvée has a wonderful depth of fruit and structure. On the palate, this Montepulciano shows a dried, earthy cherry combined with a faint clove and mushroom note. We would pair this with chicken parmigiana or stuffed shells with ground beef or pork.
