100% Sauvignon Blanc. The Quincy wine region, sits west of Sancerre in the Loire Valley. The weather is very similar to the Sancerre region, but the soils are different which gives the wines a different flavor profile. While the soils in Sancerre are typically chalk, limestone, and silex, Quincy has sandy surface soils with deeper limestone soils below.
Adèle’s father gave her a few parcels to farm and make wine from. The parcels lie south and southeast facing, and were planted between 1920 to the mid 1950’s. Although not certified organic, Adèle farms these parcels without any chemicals and also has a natural approach to her winemaking- afterall, her production fits into one stanless steel tank. Perhaps the biggest difference between Adèle and most sauvignon producers Quincy and beyond is that she chooses to leave behind a fair percentage of juice during pressing. Given that so little tonnage results from the small old-vine holdings, many vintners push to get every last drop of juice possible into the fermenter, but that's not the case with Adèle. When sauvignon blanc grapes are pressed too hard to get every last drop there is a bitter astrigency that comes along with the dregs. That bitterness is completely absent in this pure wine.
