This wine is made from old vine Auxerrois & Pinot Blanc planted on limestone soils in Alsace. Coup de Jus is a négoce project started by Géraud and Pauline Fromont, winemakers and proprietors of Domaine des Marnes Blanches in the Jura in 2018. The aim of this project to provide a safety blanket, in the event that harvests do not go as planned for their main Côtes-du-Jura cuvées - an unfortunate insurance policy many Jurassic winemakers must have. This wine is vinified whole cluster, and in neutral barrel for fermentation, where it then sits for 10 months. Unfined, unfiltered, and no sulfites added. Get it while you can, and pair it with shrimp gyoza and ground pork cabbage rolls with a sweet and savory soy glaze.
