Produced from equal parts of Grolleau, Gamay & Pinot Noir, the fruit for this wine comes from Chidaine’s estate-grown, bio-dynamically farmed vineyards located just north of the Cher river between the villages of Montrichard & Chissay-en-Touraine.

The nose of gooseberries has some some floral notes is followed by a medium-full wine with a chalky texture. Excellent acidity and beautiful tension bring up the solid mineral core. Very refreshing, but surprisingly complex, this is a perennial favorite where supply never is sufficient for demand.

Pinot Noir, Grolleau, and Gamay

VINEYARD MANAGEMENT

The grapes are harvested by hand by our team. No chemical pesticides are used. The soil is plowed. Honey plants and nematicides are sown between the rows. The preparations used are derived exclusively from processed plant, animal, and mineral materials.

SOILS

This cuvée comes from plots with flinty clay and clay-limestone soils located in the Cher Valley, in towns such as Chissay-en-Touraine and Saint-Julien-de-Chédon.

VINIFICATION

Hand-harvested, direct pressing, cold settling, fermentation with indigenous yeasts in stainless steel tanks at low temperatures, aged on lees until bottling.
