For four generations the Pavelot family has farmed a little less than 12 hectares predominantly in Savigny Les Beaune but with a few holdings in Beaune and Corton. The majority of vines are between 200 and 400m elevation and the Pavelots make few blends - they want to express individual terrors as much as possible. Called "overachievers who tower over their neighbors" by the Wall Street Journal, the wines rarely see more than 30% new oak.

LOCATION: Burgundy, Côte de Beaune, Savigny-les-Beaune.

Size, varieties, etc: 13 hectares planted to pinot noir and chardonnay.

VITICULTURE: lutte raisonnée, lots of old vines, diverse array of Savigny terroirs.

WINEMAKING: 100% de-stemmed, short pre-fermentation cold maceration, extraction both by punch-down and pump-over. After pressing, light settling, 12-18 months’ élevage on fine lees in barrel (0-30% new), no fining, light filtration.

Noteworthy: one the most tenured domaines in the Becky Wasserman & Co. Portfolio, forever one of our favorite bargain burgs. Hugues runs the show as of several years now, and was recently joined by his younger brother, pierre-yves.
