El Jolgorio Ancestral Tobasiche Mezcal opens with an expressive nose of roasted agave, fresh herbs, and damp earth, layered with notes of citrus peel, green pepper, and wildflowers. On the palate, it is rich yet remarkably elegant, revealing flavors of sweet cooked agave, mineral-driven salinity, black pepper, and subtle hints of olive, eucalyptus, and smoky mesquite. The ancestral production method lends a soft, textured mouthfeel and a restrained, integrated smoke that enhances rather than dominates the spirit. The finish is long and complex, leaving lingering impressions of herbs, stone fruit, white pepper, and a clean mineral character that invites another sip.
