Salmon: Three Wines + Three Ways
Building momentum in the Kitchen and in the Cellar can be the very best thing for your skills and, as importantly, your feelings about them. Part Two: Salmon.
This is my favorite wine from this producer, my friend Vittore. This is not the richest, nor the flashiest, nor the darkest, nor the most tannic...but, to me, this wine is just about perfect...every year. You should treat yourself.
Showing depth and elegance the site is known for, the 2020 San Lorenzo di Verduno has multi-faceted scents of ripe red berry, underbrush, dog rose, leather and eucalyptus. Full-bodied and loaded with finesse, the delicious palate delivers ripe Morello cherry, wild raspberry, star anise and ground clove set against a backbone of refined tannins. Fresh acidity keeps it balanced. (3/2024) Kerin O'Keefe
Pouring a jeweled ruby color, the 2020 Barolo San Lorenzo Di Verduno is a bit more reserved on opening, with notes of fresh red cherries, then takes a darker mineral tone aromatically, with a hint of black truffle, fresh crushed flowers, and fresh earth. The palate reveals more depth and richness while being light on its feet, with sweet tannins, more sapidity, a mouthwatering mineral tone, and a delicate glycerol richness. It has an approachable feel and is going to have a wide drinking window over the next 10-15 years. (AF) (5/2024) Jeb Dunnuck
Lifted aromas of high-toned red fruits, with fresh cherries, raspberries, and cranberries leading the charge mingle notes of clove, anise and cinnamon. Hints of thyme and rosemary, along with a touch of black tea, provide an intriguing shift to the nose as it opens. On the palate, the wine displays a balance between savory and fruit with a slightly herbal edge that adds to its allure. Fine tannins provide structure and support. Drink now - 2040. From the homonymous hill, adjacent to the Monvigliero cru, an impeccable work between the countryside and the winery culminates in a bottle of great complexity. Blueberry on the nose, notes of peony, hints of red orange and white pepper. Density on the palate, fruity return and a finish of persistence. (Apr 2024) Luca Gardini
