100% Chardonnay that is essentially baby Meursault+. 85% of the vines are in Meursault and Puligny, with the rest from declassified Saint Romain and Auxey-Duresses. The soil is clay-limestone, perfect for Chardonnay to develop both depth and piercing minerality. Yields are kept extremely low to ensure top quality. Henri Boillot is one of the premier producers in all of Burgundy for his strict approach to quality sourcing in the vineyard, and focused vinification in cellar. The wine is fermented and aged in wood for 10 months in a mix of used and new barriques (small barrels). This is top tier Bourgogne Blanc. Pair it with perfectly seared ahi tuna steaks.
