Salmon: Three Wines + Three Ways

Situated between Bassin de Thau and hills of pines, the vineyard of La Croix Gratiot is on the village of Montagnac. The vines planted on a loamy-limestone soil profit from the marine trade winds and the scents of the scrubland. This microclimate allows the grapes to reach an optimal maturity and to fully express the typicity of the grapes varieties during the different process of winemaking.
The estates produce AOC Languedoc Picpoul de Pinet and IGP Pays Oc. Yves and Hugues own the vineyard for 25 years, and decided in 2004 to create the winery. Since 2007, their daughter Anaïs Ricome oversees the team for winemaking and sale of wine.
Bright yellow robe with green highlights. Aromas of fruit with white flesh, notes of pears with a hint of citrus. Fresh and lively on the palate, a slight roundness atypically found in the middle palate that softens and helps to differentiate. Serve at 10 ° C over seafood, shellfish and grilled fish.
Appellation: Coteaux du Languedoc Grape: Picpoul de Pinet Alcohol content: 12.5% Soil: clay, limestone Winemaking: Harvested at night, stalked and crushed. Cold settling. Fermentation at controlled temperature of 15 ° C. Maturation in vats for 4 months.
