This wine is made from 100% Erbaluce. The grape is a rare varietal indigenous to Piedmont. We would pair it with a light onion-stuffed agnolotti, or potatoes au gratin with shaved black truffle or truffle oil. The wine is vinified whole cluster, and fermented at very low temperatures in large wood barrels and cement tanks. 10% of the juice sees a long maceration, adding slightly more fruit and texture to a usually acidic light bodied white. The wine's primary flavor profile is strong with gooseberry, honeydew, and white pepper. Enjoy this rare treat from Le Piane, a producer bringing back the once forgotten region of Boca.
