Marie Thibault 'Premier Nez' Chenin Blanc VDF, 2018

This wine is made of 100% Chenin Blanc. Round and dry with quince, walnut, and yellow apple notes, you'll want to pair this with something rich and flavorful. We'd love to have this with a Chinese braised Red Snapper, or 'Hong Shao Yu'. Heat oil in a pan or wok and fry some ginger, before adding your fish, scallions, shaoxing wine (yellow rice wine), Chinese black vinegar, and soy sauce. Reduce the heat to medium-low, and continuously spoon the cooking liquid over your fish for 4-5 minutes per side. Winemaker Marie Thibault is not from winemaking family or classically trained in winemaking, but has produced some of the best Chenin Blanc on the market.
