This wine is made from 100% Chenin Blanc. It is oozing with mango, passionfruit, and honeysuckle notes. The juice also undergoes 24 hours of skin contact to add a unique textural component to the wine. We would pair it with a grilled chicken caesar salad.

Details

From the winery: 2022 was our third vintage working with Chenin Blanc from the Cat Canyon Vineyard, located just outside of the small town of Los Alamos. These vines were planted on their own roots in 1978. The vineyard has sandy loam soils and also benefits from ocean-influenced weather patterns.

These grapes were foot-stomped and soaked on the skins for 24 hours before pressing and being racked to neutral French oak barrels where the juice carried out a native fermentation. The wine was aged on the lees for 7 months before being bottled without fining or filtration.

The 2022 Cat Canyon Chenin Blanc oozes with mango, passion fruit, wool, and subtle notes of honey on both the nose and the palate. The 24 hrs of skin contact adds a unique textural component to the wine that is characteristic of the varietal.
