Another magnificent wine from Bisson and its winemaker Pierluigi Lugano, the mastermind behind the “Glera” sparkling wine. Our focus this month is his ü Pastine, his most acclaimed wine. Made completely from a little-known varietal called Bianchetta Genovese, the grapes grow on vineyard plots Lugano bought on the Ligurian coastline just outside the picturesque Cinque Terre region, known for its high cliffs and striking colorful buildings stacked on top of each other. Ü Pastine is just as unique and breathtaking as the landscape of its origin. Displaying trademark salinity and the vineyard’s proximity to the Mediterranean coastline, this wine reflects a crisp and delicate body. Minerality abounds. Pair the light profile and savory flavor with white fish, to reveal a white peach note that, otherwise, hides in secrecy without food. Welcome warmer weather with this rare bottling.
