100% Cabernet Sauvignon sourced from single vineyards in the Yakima Valley and Rattlesnake Hills AVA's of Washington State. The grapes undergo whole cluster maceration before aging in neutral French oak for over a year. The wine is a fresher style of Cabernet, still with familliar notes of tobacco, black cherry, black plum, and mint, but softer tannins and lighter mouthfeel. Pair it with a grilled halloumi and eggplant sandwich.
