This wine is made of 80% Cabernet Sauvignon and 20% Cabernet Franc. Slightly peppery, but rich and nutty, with notes of prunes, cinnamon, candied walnut, and dark cherry jam. Vignalta holds their Colli Euganei DOC Cabernet in cellar for around 14-15 years, and so this wine is ready to drink ASAP. We would pair it with a heart braised beef short ribs and garlic mashed potato dinner, around the table with some very special people, whether family or friends. Colli Euganei DOC is a historic wine region, almost entirely within the Parco Regionale dei Colli Euganei, a national park in the Veneto. Colli Euganei centers around the village of Arquà Petrarca, where one of the most famous scholars and poets of the Italian Renaissance, Francesco Petrarch, settled after his diplomatic duties and writing slowed down.
