This wine is made from 80% Chardonnay and 20% Pinot Noir. It is declassified Franciacorta due to the holistic/biodynamic approach Nicola takes with his vines. Vinification takes place by spontaneous fermentation in a mix of stainless steel and cement, and the wine spends 30 "moons" on its lees. The vineyards never see any chemical treatments, and instead are filled with biodiversity; olive trees, blackberry trellises and native herbs grow throughout the property and give Nicola's vineyards added soil health and life. This wine punches at the same level as some of the great Champagnes, as the limestone soils of Lombardy contribute to an intense minerality and sharpness of fruit. Pair this with oven baked oysters, poached halibut, or lobster tails.

From our Importer: Born in Gussago, in the heart of the Franciacorta sparkling wine region, Nicola was raised in a winemaking family. However, after being introduced to the natural wine movement, he felt compelled to forge his own path—one rooted in minimal intervention and purity of expression.

Nicola practices biodynamic farming, a philosophy that extends from the vineyard into the cellar. His wines undergo spontaneous fermentation, with very low sulfite levels and minimal manipulation, allowing them to develop naturally. The soils of Gussago share a remarkable similarity with those of Champagne’s most revered vineyards, reinforcing Nicola’s mission to craft world-class sparkling wines while remaining true to his independent approach. Determined to maintain creative freedom, Nicola made the bold decision to renounce the Franciacorta DOCG, rejecting the restrictions imposed on his winemaking. Since then he has produced wines under his own label, using his deep expertise and dedication to natural methods to create sparkling wines of exceptional quality and distinction. His wines reflect not only his terroir but also his unwavering commitment to authenticity and craftsmanship.

Vineyards and winemaking
Over the years, Nicola has explored various winemaking approaches, ultimately finding his place in the natural wine movement. His philosophy is rooted in expressing terroir with purity, crafting wines that reflect both the land and his dedication to minimal intervention. Nicola produces eight distinct wines, all made using the Metodo Classico (Champenoise Method)—the same traditional technique used by the great maisons of France. His focus is on just two noble grape varieties: Pinot Noir and Chardonnay, allowing him to showcase the depth and precision that this terroir can achieve. Surrounding his estate, the vineyards sit on pure limestone soils, contributing to the minerality and structure that define his sparkling wines.

While Nicola enjoys experimenting with oxidation in his winemaking, he remains highly technically driven, ensuring that his sparkling wines maintain their balance, elegance, and precision. His lees aging follows the lunar calendar, with maturation periods ranging from 35 to 60 months, allowing the wines to develop complexity and texture. In most of his wines, he adds zero sulfur and zero sugar in the dosage “Brut Nature.” Together with neighboring producers, Nicola is working to elevate the reputation of the region, championing biodynamic farming and a commitment to producing high-quality sparkling wines that rival some of the best in the world.
