Collection: Gallois Bouché

Fabrice Gass, winemaker at Champagne Alexandre Filaine (my enduring favorite! - yes, really) mentored Guillaume Gallois during their time at Bollinger, and Guillaume readily credits Fabrice as a formative influence. This is easy to taste in his wines, now IN STOCK in our West Hartford Shop. Very Special. Very Limited.

Champagne Gallois Bouché lies on the edge of Vertus, just below the Gallois family home. The family has farmed vines and sold their harvests to others for more than a century; in 2007 Guillaume returned home and transitioned the Estate from Grower to Maker.

Working with genuinely old equipment, including a 1966 Coquard press still in use, Guillaume began vinifying the Family's wines in 2013, initially selling them only to friends.

Now, we get to sell them to our friends.

Gallois-Bouché is a mere 3.4 hectares, including prime parcels on the northern edge bordering Le Mesnil and in addition to these world class Champagnes, Guillaume keeps bees which his mother and father tend.
