60% Pinot + 40% Chardonnay. 7.5 g/l; 50% Reserve Wines; About 3 years on the lees. This vinous, special wine presents its own character and doesn't hide its provenance of craft. A protégé of Fabrice of Champagne Alexandre Filaine, this wine is truly remarkable. Delicious. An expressive bouquet where notes of white cherry and delicate flowers - lime and white peony - are intertwined with hints of white cherry and delicate flowers - supported by tangy and crunchy fruits such as the apple granny smith. Some exotic accents of mango are revealed, before evolving towards aromas of mirabelle and compoted pear. Pair with Carpaccio de Saint-Jacques with citrus fruits, supreme of poultry fine sauce with yellow wine, creamy soft cheese as a truffled shine-savarin.

Champagne Gallois-Bouché is a small, family-run grower-producer based in Vertus, a Premier Cru village in the Côte des Blancs known for top quality Chardonnay and Pinot Noir. The estate traces its roots through generations of viticultural heritage, with early ancestors cultivating vines in the early 1900s and instilling a deep connection to their chalky terroir. Today siblings Guillaume (an oenologist), Carole, Lionel and Colette carry forward this tradition with a hands-on, artisan approach in both vineyard and cellar, aiming to express the unique character of their parcels in every cuvée. Their production remains highly craft-oriented, with meticulous vineyard care by the family and winemaking adapted to each plot’s strengths, resulting in terroir-driven champagnes of clarity and precision that reflect Vertus’ mineral intensity.
