Salmon: Three Wines + Three Ways
Building momentum in the Kitchen and in the Cellar can be the very best thing for your skills and, as importantly, your feelings about them. Part Two: Salmon.
This wine is made of 100% Barbera. We would pair it with a braised lamb shank and roasted nightshade veggies (tomatoes, peppers, eggplant). 'Priora' is a selection of two well-exposed Barbera vineyards, that, according to the 'Superiore' designation, ripen more aggressively and carry a heavier "grape must". The heavier must translates to a fuller grape with more complexity, higher alcohol, and a greater capacity to age and develop. The juice is fermented in stainless steel and aged in French oak barrels for 12-14 months. What results is a heavily complex and structured Barbera, which we normally associate with being brighter and fresher with more youthful vibrancy.
