Salmon: Three Wines + Three Ways

Fred's rosé is a rosé d'assemblage composed of 70% Pinot Noir, 22% Chardonnay, and 8% still red wine. It comes entirely from the village of Ecueil. It is fermented mostly in stainless steel, with around 20% of the blend made in neutral barrels. The dosage is 6g/L. A striking and expressive rosé Champagne that deftly balances vibrancy with depth. This powerful wine bursts from the glass with notes of wild raspberries, blood orange, rose petals, and a whisper of crushed herbs. The palate is energetic and finely detailed, with a creamy mousse, bright acidity, and a subtle savory undertone that hints at chalky minerality and delicate spice. There's a refined fruit profile that remains fresh without becoming overtly sweet, leading to a dry, precise finish. This rosé shines with duck breast and a cherry glaze or similiarly luxurious decadent fare.
