Details

From the Winery:
Hand-harvested and foot-treaded to break the berries and allow the juice to come into contact with the skins for 4-6 hours. Fermented with ambient yeasts at cool temperatures in a stainless steel tank. Aged on heavy lees for 4 months, in 80% concrete egg and 20% stainless steel before gentle filter prior to bottling. 15ppm free SO was added only prior to bottling to preserve freshness.
