In the village of Molesme, amongst the rolling foothills near the border of the Aube and the Cote d’Or, where Champagne meets Burgundy, lies the vineyards of Domaine Bruno Dangin. Because Dangin grows his grapes in the Burgundy side of the divide, the wine is “Crémant de Bourgogne” instead of Champagne.  Despite not bearing the name and price tag that comes with being a Champagne, this is a must for your ever-lighter ever-brighter Early Spring dinner (or brunch!) table.  The family Domaine is run by Bruno, who has been making wine for four and a half decades and now, completely organically.  More recently Bruno has begun farming biodynamically producing no ‘waste’ and employing ancient and cosmic winemaking technique.  There on the border of Champagne and Burgundy he grows 100% Pinot Noir, in a cold climate on limestone soil.  Cold climate yields wines of great finesse, and unparalleled acidity.  Furthermore, the limestone soil which Burgundy if famous for imparts incredible minerality.  To best understand the wine’s concentration, look to the 30+ year old vines of Pinot Noir; this ‘Crémant’ shows weight and body in the glass with a pronounced texture unlike typical sparkling wine.
